Fun Friday: Pilates Edition!

TGIF!!

Hello, lovelies! I didn't blog yesterday for two reasons:
  1. I was hella busy--I did five loads of laundry, applied for two jobs, taught THREE group fitness classes, and went out to celebrate one of Wes' friend's birthday.
  2. Wednesday was mentally and emotionally draining. Eh--I don't need to go into it, but it had to do with a combination of things. I was depressed all day. By Thursday, I had nothing to blog about. I'm not a big believer in spreading negativity around, so I just didn't write anything.

Anyhoorah, you know how I like to find joy in the everyday. Thursday, I made it my mission to be positive and enjoy life. So on the positive side of things...


I had this deliciousity for lunch on Thursday...

And...Look over to the right of my blog at the Zazzle box. Yup, I designed those shirts! The powers that be must have known I needed a pick-me-up because I got a shipment of t-shirts, tanks, and bags in. What do ya think? These ones are going to two very special people (my sister and my BFF), who both need a positivity-pick-me-up.

This week I was also busy trying out tips and recipes from other bloggers. You heard about my Peanut Butter Krispie Bars experiment, but also...

Heather @Where's the Beach posted a recipe awhile back for "The Perfect Oven Fries." So I took a shot at it:



I didn't have sweet potatoes, so I used regular fries, but they still turned out so crispy and delish. I'm saving that one!


Amanda @Food Exercise Express recommended freezing a cup of yogurt and eating it like ice cream. It sounded interesting (I heart the other kind of frozen yogurt) so...


I topped my frozen Banana Cream Pie yogurt with a bit of low-fat caramel sauce. DECADENCE! :)


Not too shabby. It was a refreshing and icy treat. My yogurt was low-fat, so it had a bit more water in it, which froze up into ice, but it was almost like a yogurt Popsicle. Thanks for the tip, girlie!

She wrote a post about about mangoes, which included some interesting facts about the fruit and the politically "correct" way to cut a mango. I usually just hack away at it until it's peeled, but now I know better! :)


Her post also inspired my FUN FRIDAY recipe!

This one is sweet, savory, fresh and easy. Just fancy enough for any caliber of company. It can be served with crackers or bread. I love a good happy hour (It's five o' clock somewhere, right?), and this recipe fits the bill. Even though it's a hot app, the ingredients are uber-summer.

Raspberry-Mango Baked Brie
Ingredients:
1 round (8 oz.) Brie Cheese with rind
2 Tbsp. raspberry preserves
½ cup diced peeled mango
1-2 Tbsp. brown sugar (according to taste)
Directions:
  1. Preheat oven to 400 degrees.
  2. Place Brie in a small shallow baking dish.
  3. Spread the preserves evenly over cheese and top with mango.
  4. Sprinkle with brown sugar.
  5. Bake for 10-12 minutes or until cheese softens. Serve with crackers and French bread slices.

This weekend is another "launch party" at our gym. I'm teaching PiYo, and I'm thinking of making a "Pilates/Yoga Tips" poster to hang on the wall behind me during class. I'll post pics if I do :)

  1. Sorry to hear you had the blues. Hope you're feeling more like yourself now. Cute shirts! So glad you liked the way the "fries" turned out. They look delish.

    Tomorrow is supposed to be a day at the lake with the family then dinner with friends. It'll be a long day - but loaded with fun.

  2. Wow! You did do a lot. And I agree that it is best to not spread negativity. I always try to be honest about my feelings on the blog, but still look at the bright side when things are rough.

    Those shirts are fabulous!!! I especially like the "I Sweat Glitter" one.

  3. I've had a rough week as well. Maybe it's going around?

    The food looks delish. I want the brie and fruit! My favorite summer appetizer would have to be crab dip (without a lot of dairy) or veggie bars : ) Have you had veggie bars? They are a bit naughty and a bit healthy.
